Potatoes are a recent but valuable addition to our natural diet. Potato is rich in starch, but mostly in resistant starches, meaning they are not digested in the small intestine but reach your large intestine intact. There, your gut flora digest them, producing beneficial fatty acids. To get even more out of your potato starches, cool your potatoes before eating.

Bagged crisps and restaurant french fries (processed potatoes) are in the “cheats only” category, because both the refined starches and the seed oils used for frying are highly processed and not very healthy.
