Potatoes are a recent but valuable addition to our natural diet. But potatoes are also rich in starch. And although the starches in potatoes are mostly the healthier resistant starch, they can still cause an insulin spike. For this reason, you have to earn your potatoes while you’re on the a lower carbs diet.

Eat the potatoes you earn for the taste, not to fill up on. The center of your meals should always be vegetables and quality proteins.

Bagged crisps and restaurant french fries (processed potatoes) are in the “cheats only” category, because both the starches and the seed oils used for frying are highly processed and not very healthy.
